As with all great cuisine across most cultures, amazing recipes started as peasant food and out of need for sustenance and survival - especially dumplings!  Pierogi are no exception, but they did quickly become a favorite among all classes in Poland, with more appeal as a festive food. Our family has been preserving food through pickling and fermentation for generations as a way to have access to delicious and healthy probiotic vegetables throughout the year.  Lactic-Fermentation is a natural process with no artificial additives.  Lactic acid-forming bacteria are already there in almost all vegetables and fruits and once you add some salt and a bit of moisture to the party, things start to get interesting.
